Pumpkin Energy Balls

Looking for a healthy snack that gives you bounds of energy, happiness and explosive amount of vitamins/minerals?

Plus they are really quick to make. There’s no baking or cooking involved. Just mix and mash.

 

Go get some of your favourite seeds. Here I’ve used sunflower, linseeds (flax), hemp, chia. Then dipped into my freezer where I store small bags of roasted pumpkin pulp. That too is unbelievably simple and fast to make. I love using pumpkin in my recipes so I usually tend to do one or two large pumkins at a time then store away. Cut the pumpkin in half, place face down on oven tray and grill for 20-30 mins at 180 degrees (355 farenheit). Then with a spoon, scoop out the mushy pumpkin and put in freezer bags!

Back to the recipe… you simply blend the dates, pumpkin, seeds, honey on high speed. Place in a bowl and add the oats and coconut. Put in fridge for half hour so it’s comes together and is easier to roll.

You could also put it all into a tray, squish it out and cut into bars… but I personally enjoy these round delights.


INGREDIENTS:


  • 1 cup dates

  • ½ cup of pumpkin pulp

  • 2 tbsp honey

  • 1 tbsp hemp seeds

  • 1 tbsp chia seeds

  • 1 tbsp linseeds (flax)

  • 1 tsp cinnamon

  • ½ tsp ginger

  • ½ tsp nutmeg

  • 3 tbsp sunflower seeds

  • 1 cup of rolled oats

  • 1 cup grated coconut


INSTRUCTIONS:


  1. Place the dates, pumpkin, honey, chia/hemp/linseeds and spices into the blender.

  2. Blend on high speed for 20 seconds.

  3. Pour into a bowl and add the sunflower seeds, oats and grated coconut.

  4. Mix well and set in fridge for half hour (easier to work with afterwards).

  5. Roll into small balls and enjoy! Store in fridge using an air tight container.
