Swiss Bircher Oat Museli
One of my favourite breakfasts!
It’s simple to make and you prepare it the evening before, so it’s ready in the morning when life’s a bit of a rush. It lasts a few days too so you can make a larger batch all in one go. I hope you enjoy it as much as I do!
Bircher muesli is my absolute favourite breakfast of all time! So much that I ate it every single day for 2 years straight when living in Switzerland. It’s creamy, filling, berry fresh, has hints of cinnamon and nuts and many more wonderful things. It’s packed with nutrients, fibre, antioxidants and micronutrients.
Shop bought bircher muesli may have cream in it… this is just as tasty using organic soy yogurt (with natural blueberry, raspberry or strawberry) and almond milk. The grated apple is a key ingredient which adds some crispness to the mixture.
Rolled organic oats makes it wonderfully filling due to it’s high fibre content, also great for lowering cholesterol, keeping a healthy heart and balancing hormones. Add your favourite nuts of choice for extra nutrition and crunch. I often use hazelnuts or almonds.
Honey and raisins are the main sweeteners along with freshly squeezed orange juice. Store overnight in an airtight container and the next morning just scoop into a glass or bowl and add your fresh fruits.
INGREDIENTS:
2 cups organic rolled oats
2 cups almond milk
½ cup fresh orange juice (1 orange)
1 apple grated
1 cup organic soy or coconut yogurt (2 x 125ml pots)
⅓ cup chopped hazelnuts or almonds
⅓ cup raisins
2 tbsp honey
1 tsp cinnamon
Fresh berries
INSTRUCTIONS:
Rinse and grate apple
Squeeze juice from 1 orange
Chop up nuts
Mix together all the ingredients in a bowl
Store in airtight container in fridge for up to 3 days
