Beetroot Vitality Juice
I adore beetroots as you may have guessed with my beetroot hummus and beetroot soup recipes. Not the vacuumed packed or pickled version, but the fresh, crunchy, crimson juice dripping, nutrient bursting kind.
Beetroots have long been used for medicinal purposes. The plant pigment that gives beetroot its rich, purple-crimson colour is betacyanin; a powerful agent. These antioxidants, nutrients and nitrates help reduce the risk of heart disease by lowering inflammation, increases stamina when exercising, lowers blood pressure and may help protect against the development of some types of cancer. Beetroot fibre is very beneficial for the intestinal bacteria and is full of nutrients such as folate, potassium, vitamin A & C to name a few! So let’s start using beetroot often.
INGREDIENTS:
3 kale leaves or handful of spinach
1 medium apple, cut into wedges
1 medium carrot, peeled
1 large beet, peeled and cut into wedges
2 cm piece of peeled fresh ginger
Ice cubes (optional)
