Peach Chia Smoothie

A perfect smoothie for peach season

Peaches have just come into season now and I’ve been wanting to make a fresh morning smoothie with it. I’ve also finally found coconut water at my local organic shop which may seem uneventful to anyone not living in Italy… but unfortunately, it’s not always easy to find where we live so I’m very excited about this discovery!

Coconut water is a good substitute for almond milk in smoothies. It’s very light and refreshing and known for its potassium content and good electrolyte hydration benefits.

I chop off some baby spinach or kale from my garden pot, add the peach and coconut water with a little maple syrup as a sweetener, if you wish, then blitz away.

It’s always a good idea to top off with the power house chia seeds for their nutritional benefits. The recipe below is a generous serving for one person so simply double or triple depending on how many in your household will want one after tasting yours (usually quite a few). The result is a delicious and healthy morning smoothie. Enjoy!


INGREDIENTS:


  • 1 cup coconut water

  • 1 peach

  • 1 cup baby spinach

  • 1 tsp maple syrup (optional)

  • 1 tsp chia seeds


INSTRUCTIONS:


  1. Rinse the baby spinach and peach

  2. Slice peach in half and remove the stone

  3. Add coconut water, peach, spinach and maple syrup to blender

  4. Blend on high speed for 30 seconds

  5. Pour into glass and add chia seeds and stir in
