Banana, Spinach and Chia Smoothie

Banana, spinach and chia smoothie served in a glass topped with bee pollen

A great throw-together smoothie for breakfast or as an afternoon snack.

A green banana * smoothie that’s refreshing, delicate yet filling.

I think we all know the benefits of spinach (read here if not), and chia seeds but how many know about Bee Pollen?!

I’m sure a few savvy people out there are nodding right now… Bee-gathered pollens are rich in proteins (approx 23 % protein), and vitamins, including B-complex and folate (see here). They may even help with seasonal allergies if taken ahead of spring. So I finished off the smoothie with some chewy, sweet little golden nuggets of pollen.

Note: *Bananas are high in sugar when ripe as the complex carbohydrates ferment into simpler and sweeter ones.

INGREDIENTS:

  • 1 cup of almond milk

  • ½ banana

  • 1 handful of spinach

  • 1 tbsp chia seeds

  • 2 tsp honey

  • 1 tsp bee pollen (garnish)

INSTRUCTIONS:

  1. Place all the ingredients into a blender

  2. Blend on high speed for 20-30 seconds

  3. Pour into a glass and sprinkle with pollen
