Awesome Almond Milk

Raw almonds and vanilla pods

Better than what you can buy in a shop

It’s quicker to make than running down to the local shop for your almond milk and with no additives too! As for taste…it’s delicious, creamy and frothy.

 

Put a cup of raw organic almonds or try cashews, macadamias, brazil nuts, just pick your favourite and soak overnight in a bowl of water.  You can choose to leave the skin on if you wish and it gives it a very slight bitter hint to the milk.

In the morning, rinse the nuts, discard the water and add the nuts to your blender. Put in 3-4 cups of filtered water. Then adding a vanilla bean is of course optional but you really should try it once! Just slice open the pod down the middle and scrape out the tiny seeds with the knife.

Blend your water, nuts and vanilla for 1 minute and you’ll see some wonderful frothy looking milk nearly ready to go. Strain it through a nut bag to remove the sediment. Best part – keep the nut sediment and use it as a natural scrub in the shower! It really works well making the skin soft and moisturised.


INGREDIENTS:


  • 1 cup raw almonds organic soaked overnight

  • 4 cups of purified water

  • 1 whole vanilla pod (or use a tsp of extract)

  • 1 tbsp honey

  • ¼ teaspoon cinnamon


INSTRUCTIONS:


  1. Place almonds in a bowl and cover with water. Soak them overnight for 8-12 hours.

  2. Rinse and drain the almonds and place into a blender along with filtered water and vanilla seeds from pod.

  3. Blend on highest speed for 1 minute.

  4. Place a nut milk bag over a large bowl and slowly pour the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk.

  5. Rinse out blender and pour the milk back in. Add the cinnamon and honey and blend briefly.

  6. Place a funnel into a glass bottle and store in the fridge for up to 4-5 days.


Now the big question, do you want to add a hint of cinnamon? Perhaps a little bit of sweetness using some honey or alternatively, you can add a sweet medjool date but you’ll need to pit them and add them into the previous blending process above.

Now you pour the milk back into the blender, add your honey and cinnamon, give it a whizz, and it’s ready to go! If you use an ergonomic bottle like I have (we have plenty here in Italy for oils!) then the milk will last up to 3-4 days in the fridge. A normal bottle will last around 2-3 days. Chill and taste away!

* Nuts, seeds, and grains are nutritional powerhouses. However in order to fully utilise their nutritional profile and protect ourselves from natural toxins that protect them, they need to be soaked overnight.
