Refreshing Cucumber Lemonade
A perfect summers drink
So what do you do when your vegetable garden is brimming with cucumbers? Yup you got it – fresh cucumber lemonade. It’s crisp and very thirst quenching – a perfect summers drink and very alkaline as both cucumbers and lemons are high on the alkaline scale.
Now depending on if you have a juicer or not… there are two ways of doing the next step of extracting the cucumber juice. I use my slow grinding cold press juicer and that’s the easiest option. If you don’t have one, place the cucumber slices in a blender or food processor; blend until mashed into a pulp. Pour the cucumber pulp into a fine mesh strainer place over a bowl to catch the liquid; allow to sit and then gently squeeze until you have about 1 cup of liquid from the cucumber.
Now add the organic stevia and water together into a pitcher with the juices and stir well. Add extra stevia according to your taste.
Serve cold with ice cubes and some mint or cucumber for decoration. Enjoy!
INGREDIENTS:
1 cup of water
2 tbsp of organic stevia
1 large cucumber, peeled and sliced
6 lemons juiced
Lemon, cucumber or mint for decoration
INSTRUCTIONS:
Place the cucumber slices in a blender or food processor; blend until mashed into a pulp. Pour the cucumber pulp into a fine mesh strainer place over a bowl to catch the liquid. Or juice the cucumbers in the cold press juicer.
Stir the water, stevia, cucumber liquid and lemon juice together in a pitcher.
Serve cold with ice cubes and mint or cucumber for decoration.
