Grilled Cauliflower Head with Bell Peppers, Caramelised Onions, Nuts and Goats Cheese

This dish has been inspired from a great lunch out, catching up with some girlfriends in Stockholm

The grilled cauliflower head which I ordered made quite the impression on me. It had a different sauce and condiment to what I’ve done below as I wanted to make it a more alkaline dish.

 

I always love the combination of roasted peppers, caramelised onions and goats cheese.. and nothing quite like a sprinkle of walnuts to top it off. As you know by now, the goats cheese is less acidic than cows cheese which I avoid entirely. By adding a few favourite spices with oil, it gives the cauliflower a lovely colour when cooked in the oven.

First I start off with removing the large stalk at the bottom of the cauliflower. Then I boil it briefly in broth to infuse some additional flavour. Allow to dry on some paper towels as you prepare the rest of the dish…

I add some lovely cumin, ginger, sweet paprika, garlic, salt and mixed it with some olive oil…

Rub in the mixture all over the cauliflower head and pop into the oven…

When cooking the cauliflower in the oven, add the bell peppar (deseeded and halved)…take it out after 20 mins and place in plastic bag and let it cool. This will allow us to remove the skin easily…

As it’s all cooking in the oven, slice the red onion thinly and cook with some olive oil for a few minutes. Add the balsamic vinegar and it will slowly start to caramalise together as the onions go soft. Add the giant yellow raisins towards the end…

Remove the bell peppers from the bag, take off the skin and slice it finely into ribbons. Add the onions,raisins, bell peppers and chopped walnuts around the plate…

Add the cooked cauliflower head and sprinkle the soft goats cheese and serve warm. I hope you enjoy it!


INGREDIENTS:


  • 1 cauliflower head

  • 2 L water

  • 1 tbsp broth

  • 2 tbsp olive oil

  • 1 red bell pepper (capsicum)

  • ½ tsp garlic salt

  • 1 tsp cumin

  • 1 tsp ginger

  • 1 tsp sweet paprika

  • 1 red onion

  • 2 tbsp olive oil

  • 2 tsp balsamic vinegar

  • ⅓ cup gigantic yellow raisins

  • 100 grm goats cheese/feta


INSTRUCTIONS:


  1. Preheat oven to 200°C (400°F).

  2. Boil broth and cauliflower head for 4-5 mins. Dry on paper towels.

  3. Mix together the spices and oil and drizzle on cauliflower head.

  4. Slice the bell pepper in half and remove seeds.

  5. Place cauliflower head and bell pepper on lined oven try.

  6. Cook cauliflower for 30-40 mins.

  7. After 20 mins, remove the bell peppar and place in plastic bag.

  8. Remove the skin and slice into ribbons.

  9. Slice the red onion and cook for 10 mins in olive oil.

  10. Add the balsamic vinegar and cook for another 5 mins until it caramelises.

  11. Add in the yellow raisins and cook for 2 mins.

  12. Place cauliflower in the center of plate and decorate around with the caramelised onions and raisins, sliced bell pepper, walnuts and crumbled feta/goats cheese.
